BBQ Bacon Cheeseburger Meatloaf
Ingredients:
- 1 ½ lbs ground beef
- 1 cup shredded cheddar cheese
- 1 small onion, finely chopped
- ½ cup breadcrumbs (or crushed Ritz crackers)
- 2 eggs
- ½ cup cooked bacon, chopped (plus extra for topping if desired)
- ¼ cup ketchup
- ¼ cup BBQ sauce (plus extra for glazing)
- 1 tbsp yellow mustard
- 1 tbsp Worcestershire sauce
- Salt and pepper, to taste
- Optional: pickle slices for garnish
Instructions:

Preheat oven to 375°F (190°C). Grease a loaf pan or line a baking sheet with foil.

In a large bowl, combine ground beef, cheese, onion, breadcrumbs, eggs, bacon, ketchup, BBQ sauce, mustard, Worcestershire sauce, salt, and pepper.

Mix until just combined—don’t overmix to keep it tender.

Shape into a loaf in the pan or on the baking sheet.

Bake for 40–45 minutes, then remove and brush with extra BBQ sauce (and top with extra bacon and cheese if desired).

Return to oven for 10–15 minutes, or until internal temperature reaches 160°F.

Let it rest for 5–10 minutes, then slice and serve. Top with pickle slices if you like!
