Cheesy Ground Beef and Rice Casserole
Ingredients:
1 lb ground beef
1 small onion, diced
2 cloves garlic, minced
1 cup uncooked white rice
2 cups beef broth
1 (10.5 oz) can cream of mushroom soup (or cream of chicken)
1 (10 oz) can Rotel (diced tomatoes with green chilies)
2 cups shredded cheddar cheese, divided
1 tsp paprika
1/2 tsp salt
1/2 tsp black pepper
Optional: 1 cup frozen corn or mixed veggies

Instructions:
1. Preheat oven to 375°F (190°C).
2. In a large skillet, brown the ground beef over medium heat. Add onion and garlic; cook until soft. Drain grease.
3. Stir in uncooked rice, beef broth, cream of mushroom soup, Rotel, 1 cup of cheese, and seasonings. Mix well.
4. If using veggies, fold them in now.
5. Pour mixture into a greased 9x13 casserole dish. Cover tightly with foil.
6. Bake for 45–50 minutes, or until the rice is tender.
7. Remove foil, sprinkle remaining cheese on top, and return to oven for 5–10 minutes until melted and bubbly.
Tip: Let it sit for 5 minutes before serving so it sets up nicely. Great with a side salad or green beans!
