Cheesy Ground Beef Dip
Ingredients:
- 1 lb ground beef
- 1/2 cup diced onion
- 2 cloves garlic, minced
- 1 (10 oz) can Rotel (diced tomatoes with green chilies), drained
- 1 (8 oz) block cream cheese, softened
- 1 cup shredded cheddar cheese
- 1 cup shredded Monterey Jack (or pepper jack for a kick)
- 1 tsp chili powder
- 1/2 tsp cumin
- Salt and pepper, to taste
- Optional: sliced green onions or jalapeños for garnish
- Tortilla chips or crackers, for serving
Instructions:
- Cook beef: In a large skillet over medium heat, cook the ground beef and onion until browned. Drain excess grease.
- Add garlic & spices: Stir in the minced garlic, chili powder, cumin, salt, and pepper. Cook 1 minute until fragrant.
- Mix in extras: Add the drained Rotel and cream cheese. Stir until the cream cheese melts and everything is combined.
- Cheese it up: Reduce heat to low. Stir in the shredded cheeses until fully melted and creamy.
- Serve: Transfer to a serving bowl or a slow cooker on warm. Garnish if desired. Serve hot with chips or crackers.
