Cheesy Ground Beef Dip

Ingredients:

  • 1 lb ground beef
  • 1/2 cup diced onion
  • 2 cloves garlic, minced
  • 1 (10 oz) can Rotel (diced tomatoes with green chilies), drained
  • 1 (8 oz) block cream cheese, softened
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack (or pepper jack for a kick)
  • 1 tsp chili powder
  • 1/2 tsp cumin
  • Salt and pepper, to taste
  • Optional: sliced green onions or jalapeños for garnish
  • Tortilla chips or crackers, for serving

Instructions:

  1. Cook beef: In a large skillet over medium heat, cook the ground beef and onion until browned. Drain excess grease.
  2. Add garlic & spices: Stir in the minced garlic, chili powder, cumin, salt, and pepper. Cook 1 minute until fragrant.
  3. Mix in extras: Add the drained Rotel and cream cheese. Stir until the cream cheese melts and everything is combined.
  4. Cheese it up: Reduce heat to low. Stir in the shredded cheeses until fully melted and creamy.
  5. Serve: Transfer to a serving bowl or a slow cooker on warm. Garnish if desired. Serve hot with chips or crackers.
