Chicken and Vegetable Stew
Ingredients
2 chicken breasts (cooked and shredded)
4 medium potatoes (peeled and diced)
2 carrots (sliced)
1 onion (chopped)
3 cups chicken broth
1 cup heavy cream
2 tablespoons olive oil
2 teaspoons garlic (minced)
Salt and pepper to taste
Fresh parsley (for garnish)
Instructions
Cook chicken breasts, shred, and set aside.
Chop and slice the vegetables.
In a large pot, heat olive oil over medium heat.
Add onion and garlic, sauté until onion is translucent.
Stir in potatoes and carrots. Cook for about 5 minutes.
Pour in chicken broth. Bring to a boil.
Reduce heat, cover, and simmer for 15-20 minutes until vegetables are tender.
Add shredded chicken and heavy cream to the pot. Stir well.
Season with salt and pepper to taste.
Garnish with fresh parsley and serve hot. Enjoy!
