Dorito Taco Casserole 

Ingredients


1 lb ground beef (or ground turkey)


1 small onion, diced


1 packet taco seasoning


¾ cup water


1 can (10 oz) Rotel tomatoes (diced tomatoes with green chilies), drained


1 can (15 oz) black beans or pinto beans, drained and rinsed (optional)


1 can (10.5 oz) cream of mushroom or cheddar cheese soup


½ cup sour cream


2 cups shredded cheddar cheese (or Mexican blend)


1 bag (9.75 oz) Nacho Cheese Doritos, crushed


Optional toppings: diced tomatoes, green onions, black olives, jalapeños, shredded lettuce, or extra sour cream



Instructions


1. Preheat oven to 350°F.



2. Cook the beef & onions in a large skillet over medium heat until browned; drain excess grease.



3. Add taco seasoning & water, stir, and simmer for 2-3 minutes.



4. Stir in Rotel, beans, cream soup, and sour cream until well combined.



5. Assemble the casserole:


Layer half of the crushed Doritos in a greased 9x13-inch baking dish.


Spread the beef mixture evenly on top.


Sprinkle 1 cup of cheese.


Add the remaining Doritos and top with the remaining cheese.




6. Bake for 20-25 minutes until cheese is melted and bubbly.



7. Garnish with your favorite toppings and serve warm!
