Shrimp Chimichurri



Shrimp Chimichurri recipe:


Ingredients


For the Shrimp:


1 lb shrimp, peeled and deveined


1 tbsp olive oil


1 tsp smoked paprika


½ tsp salt


½ tsp black pepper


½ tsp garlic powder


Juice of ½ lemon



For the Chimichurri Sauce:


½ cup fresh parsley, finely chopped


2 tbsp fresh cilantro, finely chopped (optional)


3 cloves garlic, minced


½ tsp red pepper flakes (adjust to taste)


½ tsp dried oregano


½ tsp salt


¼ tsp black pepper


¼ cup olive oil


2 tbsp red wine vinegar


Juice of ½ lemon



Instructions


1. Make the Chimichurri Sauce:


In a small bowl, mix parsley, cilantro, garlic, red pepper flakes, oregano, salt, and black pepper.


Stir in olive oil, red wine vinegar, and lemon juice. Set aside for at least 15 minutes to let the flavors meld.




2. Prepare the Shrimp:


In a bowl, toss shrimp with olive oil, smoked paprika, salt, black pepper, garlic powder, and lemon juice.




3. Cook the Shrimp:


Heat a large skillet over medium-high heat.


Add shrimp and cook for 2-3 minutes per side until pink and slightly charred.




4. Assemble & Serve:


Remove shrimp from heat and drizzle with chimichurri sauce.
