Garlic Herb Roasted Veggies


Crispy, caramelized, and full of flavor—this easy side dish is a go-to for any meal!


What You’ll Need:


For the Roasted Veggies:


1 lb baby potatoes (red or gold), halved


1 cup baby carrots (or sliced regular carrots)


1 cup fresh green beans, trimmed


2 tbsp olive oil


3 cloves garlic, minced


1 tsp dried Italian seasoning


½ tsp smoked paprika


½ tsp salt


½ tsp black pepper

Directions:


1. Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper or lightly grease it.



2. In a large bowl, combine the veggies—potatoes, carrots, and green beans.



3. Drizzle with olive oil, then add the minced garlic, Italian seasoning, smoked paprika, salt, and pepper. Toss everything until evenly coated.



4. Spread the veggies out in a single layer on the baking sheet.



5. Roast for 25–30 minutes, stirring halfway through, until the potatoes are tender and everything has a golden, crispy edge.



6. Optional: Broil for the last 2–3 minutes for extra crispiness.


Serve hot, and watch them disappear—perfect alongside chicken, steak, or even just as a snack!
