Mashed Potato Cheese Puffs
Ingredients:
2 cups mashed potatoes (leftover or freshly made)
1 cup shredded cheese (cheddar, mozzarella, or your favorite mix)
1 large egg
Salt and pepper, to taste
Optional: chopped chives, garlic powder, paprika, or cooked bacon bits for extra flavor
Cooking spray or a little oil (for greasing the pan)
Instructions:
1. Preheat oven to 400°F (200°C). Lightly grease a muffin tin or line it with silicone liners.
2. Mix ingredients:
In a large bowl, combine mashed potatoes, shredded cheese, and the egg. Add salt, pepper, and any optional extras like chives or garlic powder. Mix until well blended.
3. Fill muffin cups:
Spoon the potato mixture into the muffin tin, filling each cup to the top. Gently press down to compact them slightly.
4. Bake:
Bake for 20–25 minutes or until the tops are golden brown and the edges are crispy.
5. Cool & serve:
Let them cool for 5 minutes before removing. Serve warm—perfect as a side or snack!
