Loaded Mashed Potato Meatloaf Casserole
Ingredients:
For the Meatloaf Layer:
1 ½ lbs ground beef (or a mix of beef and pork)
1 cup breadcrumbs
1 egg
½ cup milk
1 small onion, finely chopped
2 cloves garlic, minced
1 tbsp Worcestershire sauce
1 tsp salt
½ tsp black pepper
½ tsp smoked paprika
½ cup ketchup (for topping)
For the Mashed Potato Layer:
4 large russet potatoes, peeled and diced
4 tbsp butter
½ cup milk (or heavy cream)
½ cup sour cream
1 cup shredded cheese (cheddar or your favorite)
Salt and pepper, to taste
Toppings:
1 cup shredded cheddar cheese
½ cup cooked and crumbled bacon
2 tbsp chopped green onions or parsley
Instructions:
1. Preheat oven to 375°F (190°C). Grease a 9x13-inch baking dish.
2. Prepare the meatloaf layer:
In a large bowl, mix ground beef, breadcrumbs, egg, milk, onion, garlic, Worcestershire sauce, salt, pepper, and smoked paprika.
Press the mixture evenly into the prepared baking dish.
Spread ½ cup ketchup on top.
Bake for 25–30 minutes, until nearly cooked through.
3. Make the mashed potatoes:
While the meatloaf is baking, boil the potatoes in salted water until fork-tender (about 15 minutes).
Drain and mash the potatoes with butter, milk, sour cream, shredded cheese, salt, and pepper.
4. Assemble the casserole:
Spread the mashed potatoes evenly over the baked meatloaf layer.
Sprinkle the remaining shredded cheese and crumbled bacon on top.
5. Bake again:
Return to the oven and bake for another 10–15 minutes, until the cheese is melted and bubbly.
