Stuffed Meatloaf Bites



 Cheesy Stuffed Meatloaf Bites 

Ingredients:

  • 1 lb ground beef (or a mix of beef and pork)
  • ½ cup breadcrumbs
  • 1 egg
  • ¼ cup milk
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tsp salt
  • ½ tsp black pepper
  • ½ tsp smoked paprika
  • ½ tsp Italian seasoning
  • 1 cup shredded cheese (cheddar, mozzarella, or your favorite)
  • ½ cup cubed cheese (for stuffing)
  • ½ cup grated Parmesan cheese (optional, for extra flavor)
  • ½ cup ketchup or BBQ sauce (for topping)
  • Fresh parsley for garnish (optional)

Instructions:

  1. Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease it.

  2. Prepare the meat mixture:

    • In a large bowl, mix ground beef, breadcrumbs, egg, milk, chopped onion, garlic, salt, pepper, paprika, and Italian seasoning. Combine well.
  3. Form the bites:

    • Take about 2 tablespoons of the meat mixture, flatten it in your hand, and place a cube of cheese in the center.
    • Wrap the meat around the cheese, rolling it into a ball. Repeat with the remaining mixture.
  4. Coat with Parmesan (optional):

    • Roll each meatball in grated Parmesan for a crispy crust.
  5. Bake:

    • Place meatloaf bites on the baking sheet and bake for 20–25 minutes, until golden brown and cooked through.
  6. Add topping & broil:

    • Brush the tops with ketchup or BBQ sauce and broil for 2–3 minutes until caramelized.
  7. Serve warm, garnished with fresh parsley.
