Cheesy Stuffed Meatloaf Bites
Ingredients:
- 1 lb ground beef (or a mix of beef and pork)
- ½ cup breadcrumbs
- 1 egg
- ¼ cup milk
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 tsp salt
- ½ tsp black pepper
- ½ tsp smoked paprika
- ½ tsp Italian seasoning
- 1 cup shredded cheese (cheddar, mozzarella, or your favorite)
- ½ cup cubed cheese (for stuffing)
- ½ cup grated Parmesan cheese (optional, for extra flavor)
- ½ cup ketchup or BBQ sauce (for topping)
- Fresh parsley for garnish (optional)
Instructions:

Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease it.

Prepare the meat mixture:
- In a large bowl, mix ground beef, breadcrumbs, egg, milk, chopped onion, garlic, salt, pepper, paprika, and Italian seasoning. Combine well.

Form the bites:
- Take about 2 tablespoons of the meat mixture, flatten it in your hand, and place a cube of cheese in the center.
- Wrap the meat around the cheese, rolling it into a ball. Repeat with the remaining mixture.

Coat with Parmesan (optional):
- Roll each meatball in grated Parmesan for a crispy crust.

Bake:
- Place meatloaf bites on the baking sheet and bake for 20–25 minutes, until golden brown and cooked through.

Add topping & broil:
- Brush the tops with ketchup or BBQ sauce and broil for 2–3 minutes until caramelized.

Serve warm, garnished with fresh parsley.
