Sheet Pan Quesadillas
Ingredients:
2 tablespoons olive oil or butter
1 pound cooked chicken (shredded or chopped) or cooked ground beef
1 packet taco seasoning (or homemade)
1 cup bell peppers, diced
1 cup onion, diced
1 can black beans, drained and rinsed (optional)
2 cups shredded cheese (cheddar, Monterey Jack, etc.)
6–8 large flour tortillas
Cooking spray or more oil for brushing
Sour cream, salsa, or guacamole for serving
Instructions:
1. Preheat oven to 425°F (220°C). Grease a large rimmed sheet pan.
2. Prepare filling: In a skillet over medium heat, cook peppers and onions until soft (about 5–7 minutes). Add chicken or beef and taco seasoning. Stir in black beans if using.
3. Assemble quesadillas:
Lay tortillas around the edges of the sheet pan, half hanging over the edge, and cover the center with one or two tortillas so the whole pan is covered.
Spread the filling evenly across the tortillas.
Top with shredded cheese.
Fold the overhanging tortillas back over the filling to enclose it.
4. Top layer: Place another sheet pan on top (to press it down) or use another baking sheet to weigh it slightly.
5. Bake: Remove the top pan and bake for 20–25 minutes until golden and crisp.
6. Cool slightly and slice into squares or triangles.
