Creamy Corn Salad

Serves: 4–6

Chill Time (Optional): 15–30 minutes


Ingredients

For the Salad:

  • 2 cups corn kernels (fresh, frozen & thawed, or canned & drained)
  • ½ cup red bell pepper, diced
  • ½ cup green bell pepper, diced
  • ½ cup red onion, finely chopped

For the Creamy Dressing:

  • ½ cup mayonnaise (or Greek yogurt for a lighter version)
  • 2 tablespoons sour cream
  • 1 tablespoon apple cider vinegar (or lemon juice)
  • ½ teaspoon garlic powder
  • Salt and black pepper to taste
  • Optional: 1 teaspoon sugar (for a slight sweetness)

Instructions

  1. Prepare the veggies:
    In a large bowl, combine the corn, red and green bell peppers, and red onion.

  2. Make the dressing:
    In a small bowl, whisk together mayonnaise, sour cream, apple cider vinegar, garlic powder, salt, pepper, and sugar (if using) until smooth.

  3. Toss together:
    Pour the creamy dressing over the corn mixture. Gently mix until everything is evenly coated.

  4. Chill (optional):
    Cover and refrigerate for 15–30 minutes to let the flavors meld. It's even better cold!

  5. Serve:
    Stir before serving. Garnish with fresh herbs like chopped parsley or chives, if desired.
