Creamy Corn Salad

Ingredients
For the Salad:
- 2 cups corn kernels (fresh, frozen & thawed, or canned & drained)
- ½ cup red bell pepper, diced
- ½ cup green bell pepper, diced
- ½ cup red onion, finely chopped
For the Creamy Dressing:
- ½ cup mayonnaise (or Greek yogurt for a lighter version)
- 2 tablespoons sour cream
- 1 tablespoon apple cider vinegar (or lemon juice)
- ½ teaspoon garlic powder
- Salt and black pepper to taste
- Optional: 1 teaspoon sugar (for a slight sweetness)
Instructions

Prepare the veggies:
In a large bowl, combine the corn, red and green bell peppers, and red onion. -
Make the dressing:
In a small bowl, whisk together mayonnaise, sour cream, apple cider vinegar, garlic powder, salt, pepper, and sugar (if using) until smooth. -
Toss together:
Pour the creamy dressing over the corn mixture. Gently mix until everything is evenly coated. -
Chill (optional):
Cover and refrigerate for 15–30 minutes to let the flavors meld. It's even better cold! -
Serve:
Stir before serving. Garnish with fresh herbs like chopped parsley or chives, if desired.
