Ranch Green Bean and Potato Bacon Casserole
Ingredients:
1 lb baby potatoes, halved or quartered
1 lb fresh green beans, trimmed (or 2 cans, drained)
6–8 slices of bacon, cooked and crumbled
1 packet (1 oz) ranch seasoning mix
3 tbsp olive oil or melted butter
Salt & pepper, to taste
1 cup shredded cheddar cheese (optional)
1/4 cup chopped parsley or green onions (optional for garnish)

Instructions:
1. Preheat oven to 400°F (200°C).
2. Parboil the potatoes: In a large pot, boil the potatoes in salted water for 7–10 minutes until slightly tender but not fully cooked. Drain well.
3. Prep the beans (if using fresh): Blanch green beans in boiling water for 3–4 minutes, then transfer to ice water to stop the cooking. Drain.
4. Mix everything: In a large bowl, toss potatoes and green beans with olive oil (or butter), ranch seasoning, salt, pepper, and half of the crumbled bacon.
5. Assemble the casserole: Transfer to a greased 9x13 baking dish. Cover with foil and bake for 25 minutes.
6. Finish it off: Uncover, sprinkle with cheddar cheese (if using) and remaining bacon. Bake uncovered for another 10–15 minutes until potatoes are golden and cheese is melted.
7. Garnish and serve: Sprinkle with parsley or green onions if desired and serve hot.
