🧀 Cheesy Stuffed Meatloaf Bites
Ingredients:
1 lb ground beef (or a mix of beef and pork)
1/2 cup breadcrumbs
1/4 cup milk
1 large egg
1 small onion, finely chopped
2 cloves garlic, minced
1 tbsp ketchup
1 tbsp Worcestershire sauce
1 tsp salt
1/2 tsp black pepper
1 tsp Italian seasoning (optional)
4 oz block of cheddar or mozzarella, cut into small cubes (about 24 cubes)
Optional topping: ketchup or BBQ sauce for brushing

Instructions:
1. Preheat oven to 375°F (190°C). Grease a mini muffin tin or line a baking sheet with parchment paper.
2. Mix meatloaf base:
In a large bowl, combine the ground beef, breadcrumbs, milk, egg, chopped onion, garlic, ketchup, Worcestershire, salt, pepper, and seasoning. Mix until just combined—don’t overmix.
3. Form the bites:
Scoop a tablespoon of meat mixture, flatten it slightly in your palm, place a cube of cheese in the center, then wrap the meat around the cheese and roll into a ball. Place in the muffin tin or on the baking sheet.
4. Optional topping:
Brush the tops with ketchup or BBQ sauce for a sweet-savory glaze.
5. Bake:
Bake for 18–22 minutes, or until meat is cooked through and the tops are golden brown. Cheese may start to ooze—yum!
6. Serve:
Let cool for 3–5 minutes before serving. These go great with mashed potatoes, veggies, or as a party appetizer with dipping sauce.
