✅ Cowboy Meatloaf & Potatoes Casserole
👉 Ingredients:
▶️ Meatloaf Layer:
1 lb ground beef
½ cup breadcrumbs
¼ cup chopped onion
¼ cup milk
1 egg
2 tbsp Worcestershire sauce
1 tsp garlic powder
Salt & pepper to taste
▶️ Potato Topping:
3 cups mashed potatoes (leftover or freshly made)
½ cup shredded cheddar cheese
¼ cup sour cream
Salt & pepper to taste
▶️ Topping:
½ cup shredded cheddar cheese
4 slices cooked bacon, crumbled
2 tbsp chopped green onions (optional)

👉 Instructions:
1. Preheat oven to 375°F (190°C). Lightly grease a 9x9-inch or similar baking dish.
2. Make the Meatloaf Layer:
In a bowl, combine ground beef, breadcrumbs, chopped onion, milk, egg, Worcestershire sauce, garlic powder, salt, and pepper.
Mix just until combined (don’t overmix), then press into the bottom of your prepared baking dish.
3. Bake meatloaf layer for 20 minutes uncovered.
4. Prepare the Potato Topping:
While meatloaf bakes, mix mashed potatoes with cheddar cheese, sour cream, salt, and pepper.
5. Spread the potato mixture over the baked meatloaf layer.
6. Top with shredded cheese and bacon, then return to the oven.
7. Bake an additional 15-20 minutes, or until cheese is melted and bubbly.
8. Optional: Sprinkle with chopped green onions before serving.
