Sausage and Cabbage Stew

Ingredients:

  • 1 lb smoked sausage or kielbasa, sliced into rounds
  • 1 tbsp olive oil or butter
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 4 cups green cabbage, chopped
  • 3 carrots, sliced
  • 2 medium potatoes, diced (Yukon Gold or red work well)
  • 4 cups chicken broth
  • 1 (14.5 oz) can diced tomatoes (with juice)
  • 1 tsp smoked paprika (optional but recommended)
  • 1/2 tsp dried thyme
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions:

  1. Brown the sausage:
    In a large pot or Dutch oven, heat olive oil over medium heat. Add sausage slices and cook until lightly browned. Remove and set aside.

  2. Sauté vegetables:
    In the same pot, add diced onion and cook until softened (about 3–4 minutes). Add garlic and cook another 30 seconds.

  3. Add remaining ingredients:
    Stir in chopped cabbage, carrots, potatoes, broth, tomatoes (with juice), smoked paprika, thyme, salt, and pepper.

  4. Simmer:
    Bring to a boil, then reduce heat to low. Cover and simmer for 25–30 minutes, or until potatoes and carrots are tender.

  5. Finish the stew:
    Return sausage to the pot and simmer uncovered for another 5–10 minutes. Taste and adjust seasoning as needed.

  6. Serve:
    Ladle into bowls, garnish with fresh parsley if desired, and enjoy with crusty bread or cornbread.
