Sausage and Cabbage Stew
Ingredients:
- 1 lb smoked sausage or kielbasa, sliced into rounds
- 1 tbsp olive oil or butter
- 1 medium onion, diced
- 2 cloves garlic, minced
- 4 cups green cabbage, chopped
- 3 carrots, sliced
- 2 medium potatoes, diced (Yukon Gold or red work well)
- 4 cups chicken broth
- 1 (14.5 oz) can diced tomatoes (with juice)
- 1 tsp smoked paprika (optional but recommended)
- 1/2 tsp dried thyme
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
Instructions:

Brown the sausage:
In a large pot or Dutch oven, heat olive oil over medium heat. Add sausage slices and cook until lightly browned. Remove and set aside. -
Sauté vegetables:
In the same pot, add diced onion and cook until softened (about 3–4 minutes). Add garlic and cook another 30 seconds. -
Add remaining ingredients:
Stir in chopped cabbage, carrots, potatoes, broth, tomatoes (with juice), smoked paprika, thyme, salt, and pepper. -
Simmer:
Bring to a boil, then reduce heat to low. Cover and simmer for 25–30 minutes, or until potatoes and carrots are tender. -
Finish the stew:
Return sausage to the pot and simmer uncovered for another 5–10 minutes. Taste and adjust seasoning as needed. -
Serve:
Ladle into bowls, garnish with fresh parsley if desired, and enjoy with crusty bread or cornbread.
