Oatmeal Raisin Cookie Bars


Ingredients:


Dry:


1 ½ cups all-purpose flour


1 tsp baking soda


½ tsp salt


1 tsp cinnamon (optional but recommended)


1 ½ cups old-fashioned rolled oats



Wet:


1 cup (2 sticks) unsalted butter, softened


¾ cup brown sugar (packed)


½ cup granulated sugar


2 large eggs


2 tsp vanilla extract



Add-ins:


1 ½ cups raisins


½ cup chopped walnuts or pecans (optional)

Instructions:


1. Preheat oven to 350°F (175°C).

Line a 9x13-inch baking pan with parchment paper or grease it lightly.



2. In a medium bowl, whisk together the flour, baking soda, salt, and cinnamon.



3. In a large bowl, cream the butter, brown sugar, and granulated sugar until light and fluffy (about 2-3 minutes).



4. Add eggs and vanilla to the butter mixture. Mix until well combined.



5. Gradually add dry ingredients to the wet ingredients, mixing just until combined.



6. Stir in oats, raisins, and nuts (if using) until evenly distributed.



7. Spread the dough evenly into the prepared baking pan. Use a spatula to smooth the top.



8. Bake for 22–26 minutes, or until the edges are golden brown and a toothpick comes out clean in the center.



9. Cool completely in the pan before slicing into bars.
