🥔 Potato Rolls with Chicken
⭐ Ingredients:
For the filling:
1 cup cooked chicken (shredded or finely chopped)
1 small onion, finely chopped
2 cloves garlic, minced
1/2 tsp black pepper
1/2 tsp paprika (optional)
Salt to taste
1/2 tsp cumin or curry powder (optional for extra flavor)
1 tbsp oil
2 tbsp fresh parsley or coriander, chopped
1/4 cup grated cheese (optional for cheesy filling)
For the potato dough:
3 medium potatoes, peeled and boiled
2 tbsp cornstarch or all-purpose flour
Salt to taste
For coating:
1 egg, beaten (or flour-water paste for egg-free)
1 cup breadcrumbs
For frying:
Oil, for shallow or deep frying

1. Prepare the potato dough:
Mash the boiled potatoes until smooth.
Add salt and cornstarch/flour. Mix until a soft dough forms. Set aside to cool.
2. Make the chicken filling:
Heat oil in a pan. Add onion and garlic. Sauté until soft.
Add chicken, salt, pepper, and spices. Cook for 2–3 minutes.
Stir in parsley/coriander and cheese if using. Let the filling cool.
3. Shape the rolls:
Take a small portion of the potato dough and flatten it in your hand.
Place a spoonful of chicken filling in the center.
Gently roll and seal into a log or oval shape.
Repeat until all dough and filling are used.
4. Coat and fry:
Dip each roll in beaten egg (or flour-water paste), then coat with breadcrumbs.
Heat oil in a pan and fry until golden brown on all sides.
Drain on paper towels.

Serve hot with ketchup, garlic sauce, or spicy mayo. Great with a salad or in a wrap!
