🥗 Strawberry Poppyseed Salad Recipe
📝 Ingredients:
For the salad:
6 cups baby spinach (you can also use mixed greens)
2 cups fresh strawberries, sliced
½ small red onion, thinly sliced
½ cup crumbled feta or goat cheese
½ cup candied pecans or almonds
Optional: 1 avocado, sliced
Optional: Grilled chicken strips for extra protein
For the poppyseed dressing:
⅓ cup olive oil
¼ cup white wine vinegar (or apple cider vinegar)
2 tbsp honey
1 tbsp sugar
1 tbsp Dijon mustard
1 tbsp poppy seeds
¼ tsp salt
¼ tsp black pepper

🧑🍳 Instructions:
1. Make the dressing: In a small bowl or mason jar, whisk together olive oil, vinegar, honey, sugar, mustard, poppy seeds, salt, and pepper until well blended. Chill until ready to use.
2. Assemble the salad: In a large bowl, toss spinach, strawberries, onion, feta/goat cheese, and candied nuts.
3. Dress and serve: Drizzle the poppyseed dressing over the salad just before serving. Toss gently to coat and enjoy!
