Ingredients:
1 lb ground beef (80/20)
1 small onion, diced
4 slices bacon, chopped
2 cloves garlic, minced
1 cup uncooked long grain white rice
2 cups beef broth
1 (10 oz) can diced tomatoes with green chilies (like Rotel)
1 tablespoon ketchup
1 tablespoon yellow mustard
1 cup shredded cheddar cheese
Salt and pepper, to taste
Optional: pickles, green onions, sesame seeds, or shredded lettuce for garnish

Instructions:
1. Cook Bacon: In a large skillet over medium heat, cook chopped bacon until crispy. Remove and set aside on a paper towel-lined plate. Leave a bit of the bacon grease in the skillet.
2. Brown the Beef: Add ground beef and diced onion to the skillet. Cook until beef is browned and onion is soft. Drain excess fat if needed.
3. Add Garlic & Toast Rice: Stir in minced garlic and rice. Cook for 1-2 minutes to lightly toast the rice.
4. Add Liquids & Simmer: Pour in beef broth, diced tomatoes with green chilies, ketchup, and mustard. Stir to combine. Bring to a boil, then reduce heat to low, cover, and simmer for 18-20 minutes, or until rice is tender and liquid is mostly absorbed.
5. Add Cheese & Bacon: Stir in shredded cheddar cheese and cooked bacon until melted and well combined.
6. Taste & Serve: Season with salt and pepper as needed. Top with extra cheese, pickles, green onions, or sesame seeds if desired.
