🍚 Old-Fashioned Rice Pudding
Ingredients:
1 cup cooked white rice (preferably leftover)
2 cups whole milk (or any milk of choice)
1/3 cup granulated sugar
1/4 tsp salt
1 tsp vanilla extract
1/2 tsp ground cinnamon (optional)
1/4 tsp ground nutmeg (optional)
1 tbsp butter
1/3 cup raisins (optional)
1 egg, beaten (for extra creaminess — optional)

Instructions:
1. Combine the cooked rice, milk, sugar, and salt in a medium saucepan over medium heat.
2. Simmer gently, stirring occasionally, for about 15–20 minutes or until the mixture thickens.
3. If using, stir in the beaten egg slowly, whisking constantly so it doesn’t scramble. Cook for 2–3 more minutes until fully incorporated.
4. Add the vanilla, butter, and optional raisins, cinnamon, and nutmeg. Stir well and cook for another 2–3 minutes.
5. Serve warm or chilled. Sprinkle with extra cinnamon or a pat of butter on top if desired.
Tip: This pudding thickens as it cools, so add a splash of milk before reheating leftovers.
