Old-Fashioned Swiss Steak (a.k.a. Hubby’s Bliss)
A hearty, comforting dish full of rich flavor and tender beef — this is one of those recipes that feels like a warm hug at the dinner table.
Ingredients:
Ingredient Quantity
Round steak 1 1/2 lbs
Salt To taste
Black pepper To taste
All-purpose flour 1/4 cup
Olive oil or vegetable oil 2 tbsp
Onion, thinly sliced 1 large
Garlic cloves, minced 2
Diced tomatoes (with juice) 1 can (14.5 oz)
Worcestershire sauce 1 tsp
Beef broth or water 1/2 cup
Dried oregano 1/2 tsp
Dried thyme 1/2 tsp
Fresh parsley (optional) For garnish
Instructions:
1. Preheat the Oven:
Set your oven to 325°F (165°C) to get things nice and cozy.
2. Prepare the Steak:
Trim off any excess fat from the round steak. Cut it into individual serving-sized portions. Sprinkle both sides generously with salt and black pepper.
3. Dredge the Steak:
Place the flour in a shallow dish. Dredge each piece of steak in the flour until well coated, shaking off the extra.
4. Sear the Steak:
In a large ovenproof skillet or Dutch oven, heat the oil over medium-high heat. Sear the steak pieces for 2–3 minutes per side, until browned. Remove and set aside.
5. Sauté Aromatics:
In the same pan, reduce heat to medium and add the sliced onions. Sauté for 3–4 minutes until softened. Stir in the minced garlic and cook for another 30 seconds.
6. Build the Sauce:
Pour in the diced tomatoes (with juice), Worcestershire sauce, beef broth (or water), oregano, and thyme. Stir everything together and bring to a gentle simmer.
7. Combine & Bake:
Return the seared steak to the pan, nestling them into the tomato-onion mixture. Spoon some sauce over the top. Cover with a lid or foil and transfer the skillet to the preheated oven.
8. Bake Until Tender:
Bake for 1 1/2 to 2 hours, or until the meat is fork-tender and the flavors are well married.
9. Garnish & Serve:
Sprinkle with freshly chopped parsley before serving if desired.
