🍌 Banana Bread Chocolate Chip Muffins
Ingredients (makes about 12 muffins):
1 ½ cups all-purpose flour
1 tsp baking soda
1 tsp baking powder
½ tsp salt
3 medium ripe bananas (about 1 ¼ cups mashed)
½ cup unsalted butter (melted & slightly cooled) or vegetable oil
¾ cup brown sugar (or white sugar)
1 large egg
1 tsp vanilla extract
½ cup sour cream or plain Greek yogurt (adds moisture)
1 cup semisweet or milk chocolate chips
Optional: ½ cup chopped walnuts or pecans
Instructions:
1. Preheat oven to 350°F (175°C). Line a 12-cup muffin pan with paper liners or grease with nonstick spray.
2. Mix dry ingredients: In a medium bowl, whisk flour, baking soda, baking powder, and salt. Set aside.
3. Prepare wet mixture: In a large bowl, mash bananas until smooth. Stir in melted butter, sugar, egg, vanilla, and sour cream until well combined.
4. Combine: Add the dry ingredients to the banana mixture and gently stir until just combined (do not overmix).
5. Fold in: Stir in chocolate chips (and nuts, if using).
6. Fill muffin tin: Divide batter evenly among muffin cups, filling about ¾ full. Sprinkle a few extra chocolate chips on top if you’d like.
7. Bake: 18–22 minutes, or until a toothpick inserted into the center comes out clean (a few melted chocolate streaks are okay).
8. Cool: Let muffins rest in the pan for 5 minutes, then transfer to a wire rack to cool completely.
✨ These muffins are perfect warm, with the chocolate still melty, or cooled for a grab-and-go snack.
