๐ถ Easy Stuffed Peppers
Ingredients:
4 large bell peppers (any color, tops cut off, seeds removed)
1 lb (450 g) ground beef (or ground turkey/chicken)
1 cup cooked rice (white or brown)
1 small onion, finely chopped
2 cloves garlic, minced
1 can (14.5 oz) diced tomatoes, drained
1 cup shredded mozzarella or cheddar cheese (divided)
1 tsp Italian seasoning
1 tsp salt
½ tsp black pepper
1 cup marinara or tomato sauce
Instructions:
1. Preheat Oven → 375°F (190°C).
2. Prepare Peppers → Cut tops off peppers, remove seeds & membranes. Boil in salted water for 5 minutes to soften slightly. Drain and set aside.
3. Cook Filling → In a skillet, cook ground beef, onion, and garlic until browned. Drain excess fat.
4. Mix → Stir in cooked rice, diced tomatoes, half of the cheese, Italian seasoning, salt, and pepper. Mix well.
5. Stuff Peppers → Spoon beef mixture into each pepper until full. Place upright in a baking dish.
6. Add Sauce → Pour marinara or tomato sauce around and a little on top of each pepper.
7. Bake → Cover with foil and bake 30 minutes. Remove foil, sprinkle remaining cheese on top, and bake another 10 minutes until bubbly and golden.
8. Serve → Let rest for 5 minutes before serving.
✅ Tips:
You can swap rice for quinoa, cauliflower rice, or orzo pasta.
Add veggies (like corn, zucchini, or mushrooms) to the filling for extra flavor.
Make it cheesy by adding cream cheese to the filling.
