🥧 Creamy Florida Shrimp Pie
Ingredients:
1 (9-inch) deep-dish pie crust, unbaked (homemade or store-bought)
1 lb medium Florida shrimp, peeled, deveined, and cooked
2 tbsp butter
1 small onion, finely chopped
1 small green bell pepper, finely chopped
1 rib celery, finely chopped
2 cloves garlic, minced
2 tbsp all-purpose flour
1 cup whole milk (or half-and-half for richer flavor)
½ cup heavy cream
½ tsp Old Bay seasoning (or paprika + pinch of cayenne)
Salt & black pepper, to taste
1 cup shredded cheddar cheese (or Swiss/Monterey Jack)
2 large eggs, lightly beaten
2 tbsp fresh parsley, chopped
Optional: 1 tsp lemon juice for brightness
Instructions:
1. Preheat oven to 375°F (190°C).
2. Cook veggies: In a skillet, melt butter and sauté onion, bell pepper, celery, and garlic until softened (about 5 minutes).
3. Make creamy base: Stir in flour and cook 1 minute. Slowly whisk in milk and cream until smooth and thickened. Season with Old Bay, salt, and pepper.
4. Add shrimp & cheese: Stir in cooked shrimp, cheese, parsley, and lemon juice if using. Remove from heat and let cool slightly.
5. Mix with eggs: Slowly stir beaten eggs into the cooled mixture (so they don’t scramble).
6. Assemble pie: Pour the filling into the unbaked pie crust. Smooth the top.
7. Bake: Place on a baking sheet and bake 35–40 minutes, until golden and set in the center.
8. Cool slightly before serving for best slicing.

Garnish with extra parsley or green onions.
