🦐 Mixed Seafood in Creamy Garlic Wine Sauce
Ingredients:
1 lb mixed seafood (shrimp, squid/calamari, bay scallops — or clams, mussels, or fish chunks)
2 tbsp olive oil
3 tbsp butter
5 cloves garlic, minced
½ cup dry white wine
1 cup heavy cream (or half-and-half for lighter)
½ tsp smoked paprika (optional)
Salt & black pepper, to taste
Pinch of red pepper flakes (optional, for heat)
2 tbsp fresh parsley, chopped
Lemon wedges (for serving)
Instructions:
1. Prepare seafood: If using frozen, thaw and pat dry. Season lightly with salt and pepper.
2. Sauté garlic: Heat olive oil and butter in a large skillet over medium heat. Add garlic and cook until fragrant (about 1 minute).
3. Deglaze with wine: Pour in the white wine and let it simmer for 2–3 minutes, reducing slightly.
4. Make sauce: Lower heat, stir in heavy cream, paprika, and red pepper flakes. Simmer until slightly thickened (about 3 minutes).
5. Cook seafood: Add shrimp, squid, and scallops. Simmer gently for 4–6 minutes, until shrimp are pink, scallops opaque, and squid tender. (Do not overcook.)
6. Finish: Stir in fresh parsley. Taste and adjust seasoning.
7. Serve: Garnish with extra parsley and a squeeze of lemon.
