🧄 Pan-Seared Garlic Butter Salmon with Spinach & Mushrooms
📋 Ingredients:
2 salmon fillets (skin-on or skinless)
Salt & black pepper, to taste
½ tsp paprika (optional)
1 tbsp olive oil
2 tbsp unsalted butter
3 cloves garlic, minced
1 cup mushrooms, sliced (button or cremini)
3 cups fresh spinach
½ cup heavy cream (or half & half)
Juice of ½ lemon
Grated Parmesan (optional)
Fresh parsley or dill, chopped (for garnish)
👩🍳 Instructions:
1. Season & Sear the Salmon:
Pat salmon fillets dry. Season both sides with salt, pepper, and paprika.
Heat olive oil in a large skillet over medium-high heat.
Place salmon skin-side down and sear for about 4 minutes.
Flip and cook the other side for another 3–4 minutes until golden and cooked through. Remove and set aside.
2. Sauté the Veggies:
In the same skillet, reduce heat to medium. Add butter and minced garlic. Sauté for 30 seconds.
Add mushrooms. Cook 3–4 minutes until browned.
Add spinach and cook until wilted, about 1–2 minutes.
3. Make the Creamy Sauce:
Pour in heavy cream and lemon juice. Let simmer for 2–3 minutes until slightly thickened.
Taste and adjust seasoning.
4. Bring It Together:
Return the salmon to the skillet. Spoon sauce and veggies over the top.
Optional: Sprinkle with Parmesan and fresh herbs.
5. Serve Immediately with mashed potatoes, pasta, or crusty bread to soak up the sauce.
