🧀 Cheesy Zucchini Breadsticks
Ingredients:
2 cups shredded zucchini (excess water squeezed out)
1 large egg
1 cup shredded mozzarella cheese (plus more for topping)
¼ cup grated Parmesan cheese
⅓ cup almond flour or all-purpose flour
1 tsp Italian seasoning
½ tsp garlic powder
Salt and black pepper to taste
Optional garnish: chopped parsley, red pepper flakes, marinara for dipping
Instructions:
1. Prep the Zucchini:
Preheat oven to 425°F (220°C).
Place the shredded zucchini in a clean towel and squeeze out as much liquid as possible.
You should be left with about 1 to 1½ cups of dry zucchini.
2. Mix the Dough:
In a bowl, combine the zucchini, egg, 1 cup mozzarella, Parmesan, flour, Italian seasoning, garlic powder, salt, and pepper.
Mix until it forms a thick, sticky dough.
3. Bake the Base:
Line a baking sheet with parchment paper. Spread the zucchini mixture into a rectangle about ½ inch thick.
Bake for 15–18 minutes until firm and lightly golden.
4. Add Toppings & Finish Baking:
Sprinkle extra mozzarella cheese on top.
Return to oven and bake another 5–7 minutes until cheese is bubbly and slightly golden.
5. Cool, Slice & Serve:
Let it cool for a couple of minutes, then slice into sticks.
Garnish with parsley or red pepper flakes if desired.
Serve warm with marinara sauce for dipping.
✅ Tips:
For extra crispy sticks, broil for 2–3 minutes at the end.
Can be made gluten-free using almond or coconut flour.
Leftovers can be reheated in the oven or air fryer.
