🦞 Seafood Gratin
Ingredients:
1 lb (450g) mixed seafood (shrimp, scallops, crab, or fish chunks)
3 tbsp butter
2 tbsp flour
1 ½ cups milk (warm)
½ cup heavy cream
½ cup dry white wine (optional, can use seafood stock instead)
2 cloves garlic, minced
1 small onion or shallot, finely chopped
½ cup Parmesan cheese, grated
1 cup Gruyère or mozzarella cheese, shredded
½ tsp paprika
½ tsp dried thyme (or parsley/dill for a lighter flavor)
Salt & pepper, to taste
1 cup breadcrumbs (panko for crunch)
2 tbsp butter (melted, for topping)
Fresh parsley, chopped (for garnish)

Instructions:
1. Prepare the Seafood
Pat seafood dry and season lightly with salt and pepper.
If using shrimp or scallops, sear them briefly in butter (1–2 minutes) just until slightly golden but not fully cooked. Set aside.
2. Make the Creamy Sauce
In a saucepan, melt 3 tbsp butter, then sauté onion and garlic until soft.
Stir in flour to make a roux, cook 1 minute.
Gradually whisk in warm milk, cream, and wine/stock until smooth.
Stir in Parmesan, thyme, paprika, salt, and pepper. Simmer until slightly thickened.
3. Assemble the Gratin
Preheat oven to 375°F (190°C).
Spread seafood evenly in a buttered baking dish.
Pour the sauce over seafood.
Sprinkle Gruyère (or mozzarella) over top.
4. Topping
Mix breadcrumbs with 2 tbsp melted butter. Sprinkle over cheese layer.
5. Bake
Bake uncovered for 20–25 minutes, until golden and bubbling.
6. Serve
Garnish with parsley. Serve hot with crusty bread, rice, or a green salad.
