🔥 Smoked Sausage and Potato Bake
🧂 Ingredients:
1 lb smoked sausage, sliced into rounds
1.5 lbs Yukon Gold potatoes, cut into 1-inch chunk
1 red bell pepper, chopped
1 green bell pepper, chopped
1 small onion, chopped
3 tbsp olive oil
1 tsp garlic powder
1 tsp smoked paprika
1 tsp dried Italian seasoning
Salt & black pepper, to taste
Optional: chopped fresh parsley for garnish
🔪 Instructions:
1. Preheat oven to 400°F (200°C).
2. In a large bowl, combine potatoes, bell peppers, and onions.
3. Drizzle with olive oil and sprinkle on garlic powder, paprika, Italian seasoning, salt, and pepper. Toss until evenly coated.
4. Add the sliced smoked sausage and toss again.
5. Spread mixture in a single layer on a large baking sheet or roasting pan lined with parchment paper or lightly greased.
6. Bake for 40–45 minutes, stirring halfway through, until potatoes are golden and tender.
7. Garnish with fresh parsley before serving (optional).
✅ Tips:
Swap Yukon Golds for red potatoes or baby potatoes if needed.
Add a pinch of crushed red pepper flakes for some kick
Serve with sour cream or a simple garlic aioli on the side.
