🍅 Tomato Basil Baked Cod
Ingredients:
2 cod fillets
1 cup cherry tomatoes, halved
2 tbsp olive oil
2 garlic cloves, minced
1 tbsp balsamic vinegar
¼ cup fresh basil, chopped
Salt & pepper to taste
Optional: toasted pine nuts for garnish
Instructions:
1. Preheat your oven to 375°F (190°C).
2. Prepare the tomato topping:
In a bowl, combine cherry tomatoes, garlic, olive oil, balsamic vinegar, basil, salt, and pepper.
3. Season the cod:
Place cod fillets in a lightly greased baking dish. Season with salt and pepper.
4. Assemble and bake:
Spoon the tomato mixture evenly over the fillets.
Bake uncovered for 15–20 minutes, or until the cod flakes easily with a fork.
5. Garnish and serve:
Top with fresh basil and optional toasted pine nuts.
Serve with rice, quinoa, or crusty bread.
