Apple Pie Egg Rolls




๐Ÿ Apple Pie Egg Rolls
Crispy outside, warm apple pie filling inside — the perfect handheld treat!
Ingredients:
2 medium apples (peeled, cored, diced small)
2 tbsp butter
2 tbsp brown sugar
2 tbsp white sugar
1 tsp cinnamon
1/4 tsp nutmeg (optional)
1 tsp lemon juice
1 tsp cornstarch + 1 tbsp water (slurry)
8–10 egg roll wrappers
Oil for frying (vegetable or canola)

Optional for serving: powdered sugar, caramel sauce, or vanilla ice cream ๐Ÿจ

Instructions:
1. Cook the filling:
In a skillet, melt butter over medium heat.
Add diced apples, sugars, cinnamon, nutmeg, and lemon juice.
Cook until apples are tender (about 5–6 minutes).
Stir in cornstarch slurry and cook 1–2 minutes until thickened. Remove from heat and cool slightly.


2. Assemble egg rolls:
Place 1–2 tbsp apple filling in the center of each wrapper.
Fold sides in, roll tightly, and seal edges with a little water.


3. Cook:
Heat oil to 350°F (175°C). Fry egg rolls 2–3 minutes per side until golden brown.
Drain on paper towels.


4. Serve:
Dust with powdered sugar or drizzle with caramel sauce.
Best enjoyed warm!
