🌰 Buttery Pecan Snowball Cookies
Ingredients:
1 cup (2 sticks) unsalted butter, softened
½ cup powdered sugar (plus more for rolling)
2 tsp vanilla extract
2 ¼ cups all-purpose flour
¼ tsp salt
1 cup finely chopped pecans

Instructions:
1. Prep the oven – Preheat to 350°F (175°C). Line a baking sheet with parchment paper.

2. Make the dough – In a large bowl, cream together the butter and ½ cup powdered sugar until light and fluffy. Mix in vanilla.

3. Add dry ingredients – Gradually add flour and salt, mixing until combined. Stir in the chopped pecans.

4. Shape cookies – Roll dough into 1-inch balls and place them about 1 inch apart on the baking sheet.

5. Bake – Bake for 12–14 minutes, until the bottoms are lightly golden (tops will stay pale).

6. First sugar coat – Let cookies cool for 5 minutes, then roll them in powdered sugar while still warm.

7. Second sugar coat – Once completely cooled, roll again in powdered sugar for a thick snowy coating.
