🥥 Coconut Chewies
Ingredients:
1 cup (2 sticks) butter, melted
2 cups light brown sugar, packed
2 large eggs
2 tsp vanilla extract
2 cups all-purpose flour
2 tsp baking powder
½ tsp salt
2 cups sweetened shredded coconut
Optional (for extra flavor):
½ cup chopped pecans or walnuts
½ cup white chocolate chips

Instructions:
1. Preheat oven to 350°F (175°C). Grease or line a 9x13-inch baking pan with parchment paper.
2. In a large bowl, mix melted butter and brown sugar until smooth.
3. Add eggs and vanilla, whisk until well combined.
4. In another bowl, whisk flour, baking powder, and salt. Gradually add to the wet mixture.
5. Stir in coconut (and nuts/white chocolate if using). Batter will be thick.
6. Spread evenly into the prepared pan.
7. Bake 25–30 minutes, or until edges are golden and center is set (a toothpick should come out with moist crumbs, not wet batter).
8. Cool completely before cutting into squares or bars.
