🍲 Company Chicken Casserole Recipe
A creamy, cheesy, and comforting chicken casserole topped with buttery cracker crumbs—perfect for family dinners or gatherings!
Ingredients
4 boneless, skinless chicken breasts
Salt & pepper (to taste)
2 tbsp olive oil
1 onion, diced
2 cloves garlic, minced
1 bell pepper, diced
1 cup mushrooms, sliced
1 cup frozen peas
1 cup frozen corn kernels
1 can (10.5 oz) cream of chicken soup
1 cup chicken broth
1 cup sour cream
1 cup shredded cheddar cheese
2 cups crushed butter crackers (like Ritz)
1/4 cup butter, melted
Instructions
1. Preheat Oven
Heat oven to 350°F (175°C). Grease a 9×13-inch baking dish.
2. Cook the Chicken
Season chicken with salt & pepper.
Heat olive oil in a skillet and sear chicken breasts 4–5 minutes per side until golden brown. Remove and set aside.
3. Sauté Vegetables
In the same skillet, sauté onion, garlic, bell pepper, and mushrooms for 5–7 minutes until softened.
4. Make the Filling
In a large bowl, combine sautéed veggies, peas, corn, cream of chicken soup, chicken broth, sour cream, and cheddar cheese.
Spread this mixture evenly in the baking dish. Place chicken breasts on top.
5. Prepare Topping
Mix crushed crackers with melted butter. Sprinkle evenly over casserole.
6. Bake
Bake uncovered for 25–30 minutes, until bubbly and golden brown.
7. Serve
Let cool slightly before serving. Garnish with parsley if desired.
