Seafood Stuffed Baked Potatoes



🌊 Seafood Stuffed Baked Potatoes


Ingredients (serves 4):


4 large russet potatoes


2 tbsp butter


1 small onion, finely diced


1 clove garlic, minced


½ lb shrimp, peeled & chopped


½ cup lump crab meat (or imitation crab)


½ cup sour cream


½ cup shredded cheddar cheese (plus extra for topping)


¼ cup cream cheese, softened


2 tbsp milk (more if needed for creaminess)


1 tsp Old Bay seasoning (or Cajun seasoning)


Salt & black pepper, to taste


2 tbsp chopped green onions (for garnish)


Optional: a squeeze of lemon juice for brightness

Instructions:


1. Bake the potatoes:

Preheat oven to 400°F (200°C). Scrub potatoes, pierce with a fork, rub with a little oil and salt. Bake 1 hour or until tender.



2. Cook the filling:

In a skillet, melt butter. Sauté onion and garlic until soft. Add shrimp and cook until just pink (2–3 minutes). Stir in crab meat, seasoning, salt, and pepper. Remove from heat.



3. Prepare the potato base:

Cut baked potatoes in half lengthwise. Scoop out flesh into a bowl, leaving a thin shell. Mash potato flesh with sour cream, cream cheese, milk, and half of the shredded cheddar until creamy.



4. Mix it together:

Stir seafood mixture into mashed potatoes. Taste and adjust seasoning.



5. Stuff & bake:

Spoon filling back into potato shells. Sprinkle with extra cheddar. Bake 15 minutes until golden and bubbly.



6. Garnish & serve:

Top with green onions and a squeeze of lemon if desired.
