🥔 Creamed Potatoes and Peas


Ingredients
2 lbs red potatoes, boiled and diced
¼ cup butter
3 Tbsp all-purpose flour
1 ½ tsp salt
¼ tsp black pepper
1 ½ cups milk (whole milk works best)
1 ½ cups peas (fresh or frozen, cooked until tender)

Instructions
1. Prepare the potatoes
Boil the red potatoes until fork tender.
Drain, cool slightly, then cut into bite-size chunks. Set aside.


2. Make the cream sauce
In a large skillet or saucepan, melt the butter over medium heat.
Stir in the flour and cook for 1 minute, whisking constantly, to make a smooth roux.
Gradually whisk in the milk until smooth and thickened (about 5–7 minutes).


3. Season
Stir in the salt and pepper. Taste and adjust seasoning if needed.


4. Combine
Gently stir in the potatoes and peas until coated with the creamy sauce.
Heat through for 3–4 minutes, being careful not to mash the potatoes.


5. Serve
Spoon into a serving bowl and enjoy warm. This dish pairs perfectly with ham, chicken, or roast beef.
