🧾 Ingredients:
1 (20 oz) bag frozen shredded hashbrowns, thawed
1 lb breakfast sausage (mild or spicy), cooked and crumbled
2 cups shredded cheddar cheese
2 large eggs, beaten
½ cup sour cream
½ cup all-purpose flour (or ½ cup Bisquick for extra fluffiness)
1 tsp garlic powder
1 tsp onion powder
½ tsp smoked paprika (optional)
½ tsp black pepper
½ tsp salt (adjust if sausage is salty)
2 tbsp chopped fresh parsley (optional, for garnish)

1. Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease it.

2. Cook sausage in a skillet until browned and crumbly. Drain excess grease and let cool slightly.

3. In a large mixing bowl, combine hashbrowns, sausage, cheese, eggs, sour cream, flour (or Bisquick), and seasonings. Mix until everything sticks together.

4. Scoop into 1–2 inch balls (a cookie scoop works great) and place on prepared baking sheet.

5. Bake for 20–25 minutes, or until golden brown and crispy on the edges.

6. Optional: Switch to broil for 2–3 minutes at the end for extra crispiness.

7. Sprinkle with parsley and serve hot with your favorite dipping sauce (ranch, ketchup, or spicy mayo).
