Macaroni Salad

Ingredients:
2 cups elbow macaroni, cooked and cooled
1/2 cup mayonnaise
1 tbsp yellow mustard
1 tbsp apple cider vinegar
1 tsp sugar
1/2 tsp salt
1/4 tsp black pepper
1/2 cup shredded cheddar cheese
1/2 cup diced bell pepper (red, green, or both)
1/2 cup diced celery
1/4 cup diced red onion
1/4 cup diced dill pickles or relish
1/4 cup chopped parsley (optional)
2 hard-boiled eggs, chopped (optional)
Instructions:
1. Cook Macaroni – Cook elbow macaroni according to package instructions. Drain, rinse with cold water, and set aside.
2. Prepare Dressing – In a large mixing bowl, whisk together mayonnaise, mustard, vinegar, sugar, salt, and pepper.
3. Combine Ingredients – Add cooked macaroni, cheddar cheese, bell peppers, celery, red onion, pickles, and parsley (if using). Stir well to coat everything in the dressing.
4. Chill – Cover and refrigerate for at least 1 hour to allow flavors to meld.
5. Serve & Enjoy! – Give it a quick stir before serving. Adjust seasoning if needed.
