Mexican Shrimp in Garlic Salsa served with warm flour tortillas:
Ingredients:
1 teaspoon oil
1 onion, chopped
3 cloves garlic (1 chopped, 2 finely minced)
1 tablespoon chili powder (or to taste)
1 pound shrimp, peeled and deveined
1 cup diced tomatoes (fresh or canned)
1/2 teaspoon cumin
1/2 teaspoon smoked paprika
Salt and pepper to taste
1 tablespoon lime juice
1/4 cup chopped fresh cilantro (optional)
Warm flour tortillas for serving
Instructions:
1. Heat oil in a large skillet over medium heat.
2. Add the chopped onion and cook until softened, about 3 minutes.
3. Stir in the chopped garlic and finely minced garlic, cooking for another minute until fragrant.
4. Add the chili powder, cumin, smoked paprika, salt, and pepper. Stir well.
5. Pour in the diced tomatoes and simmer for 5 minutes, allowing the flavors to blend.
6. Add the shrimp and cook for 3-4 minutes, or until they turn pink and opaque.
7. Squeeze in the lime juice and sprinkle with fresh cilantro.
8. Serve hot with warm flour tortillas.
