Ingredients:
2 eggs, beaten
1 cup milk
2 teaspoons paprika
½ teaspoon poultry seasoning
4 teaspoons garlic salt
2 teaspoons black pepper
2 cups all-purpose flour
1 whole chicken, cut into pieces (or 6-8 bone-in chicken thighs/drumsticks)
Vegetable oil, for frying
Instructions:
1. Prepare the Chicken:
Pat the chicken pieces dry with paper towels.
2. Make the Wet Batter:
In a bowl, whisk together the eggs and milk.
3. Make the Seasoned Flour:
In another bowl, mix flour, paprika, poultry seasoning, garlic salt, and black pepper.
4. Coat the Chicken:
Dip each piece of chicken into the egg mixture, letting excess drip off.
Dredge in the seasoned flour, pressing to coat well.
For extra crispiness, dip the chicken back into the egg mixture and flour again for a double coating.
5. Let it Rest:
Place the coated chicken on a wire rack and let it sit for 10-15 minutes. This helps the coating stick.
6. Heat the Oil:
In a large, deep skillet or Dutch oven, heat about 2-3 inches of vegetable oil to 350°F (175°C).
7. Fry the Chicken:
Fry the chicken in batches, skin-side down first, for 10-12 minutes per side, or until golden brown and the internal temperature reaches 165°F (74°C).
Avoid overcrowding the pan to maintain the oil temperature.
8. Drain & Serve:
Remove the fried chicken and place it on a wire rack or paper towels to drain excess oil.
Let it rest for a few minutes before serving.
