Loaded Mashed Potato and Meatball Casserole
Ingredients:
• 1 lb frozen or homemade meatballs
• 4 cups mashed potatoes
• 1 cup shredded cheddar cheese
• 1/2 cup sour cream
• 1/2 cup cooked bacon bits
• 1/4 cup chopped green onions
• 2 tbsp butter
• Salt and pepper to taste
Instructions:
1. Preheat the oven to 350°F (175°C).
2. Spread the mashed potatoes evenly in a greased baking dish.
3. Top the mashed potatoes with meatballs, arranging them evenly.
4. Sprinkle the shredded cheddar cheese over the meatballs and potatoes.
5. Bake in the preheated oven for 25 minutes, or until the meatballs are heated through and the cheese is melted.
6. Remove from the oven and top with sour cream, bacon bits, and chopped green onions.
7. Season with salt and pepper to taste.
8. Serve hot and enjoy your comforting, loaded casserole!
