Cheesy Hamburger Potato Soup 🥔🧀
Ingredients:
1 lb ground beef
1 tablespoon olive oil
1 small onion, finely chopped
3 cloves garlic, minced
4 cups peeled and diced potatoes (about 4 medium potatoes)
3 cups chicken or beef broth
1 teaspoon salt, or to taste
1/2 teaspoon black pepper
1 teaspoon smoked paprika
2 cups shredded cheddar cheese
1 cup milk (whole or 2%)
1/2 cup heavy cream
2 tablespoons all-purpose flour (optional, for thickening)
1/4 cup chopped fresh parsley, for garnish
Instructions:
Brown the Beef: In a large pot or Dutch oven, heat the olive oil over medium heat. Add the ground beef and cook until browned, breaking it up with a spoon, about 5-7 minutes. Drain excess fat if needed.
Cook the Aromatics: Add the chopped onion and minced garlic to the pot with the browned beef. Sauté for 3-4 minutes, until the onion is translucent and fragrant.
Add Potatoes and Broth: Stir in the diced potatoes, salt, pepper, smoked paprika, and broth. Bring the mixture to a boil, then reduce the heat and let it simmer for 15-20 minutes, or until the potatoes are tender.
Make It Cheesy: In a small bowl, whisk the flour with the milk until smooth (if using for thickening). Add the milk and heavy cream to the soup, stirring well. Gradually add the shredded cheddar cheese, stirring constantly until melted and the soup is smooth.
Adjust Consistency: If the soup is too thick, add a bit more milk or broth until it reaches your desired consistency. Simmer for another 5 minutes to let the flavors meld together.
Serve: Ladle the cheesy hamburger potato soup into bowls and sprinkle with chopped parsley. Enjoy this warm, hearty, and cheesy delight with some crusty bread!
