Crispy Air Fryer Roast Potatoes
Ingredients:
2 lbs potatoes (Yukon Gold or Russet), peeled & cut into chunks
2 tbsp olive oil
1 tsp garlic powder
1 tsp smoked paprika
½ tsp salt (or to taste)
½ tsp black pepper
1 tsp dried parsley (optional)
Instructions:
1. Parboil for Extra Fluffiness (Optional): Bring a pot of salted water to a boil. Add potatoes and boil for 5 minutes. Drain well and let them dry for a minute.
2. Season: Toss the potatoes with olive oil, garlic powder, smoked paprika, salt, and pepper. Shake the bowl to rough up the edges (this makes them crispier!).
3. Air Fry: Preheat air fryer to 400°F (200°C). Spread potatoes in a single layer in the basket.
4. Cook: Air fry for 20-25 minutes, shaking the basket every 5-7 minutes, until golden brown and crispy.
5. Serve: Sprinkle with parsley and enjoy!
