Pineapple Quick Bread 🍍🍞
Ingredients:
2 cups all-purpose flour
¾ cup granulated sugar
1 ½ tsp baking powder
½ tsp baking soda
½ tsp salt
½ cup unsalted butter, melted
2 large eggs
1 tsp vanilla extract
1 (20 oz) can crushed pineapple, undrained
½ cup chopped pecans or walnuts (optional)
½ cup shredded coconut (optional, for extra tropical flavor)
Instructions:
1. Preheat Oven: Set oven to 350°F. Grease a 9x5-inch loaf pan.
2. Mix Dry Ingredients: In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
3. Combine Wet Ingredients: In another bowl, whisk melted butter, eggs, vanilla, and crushed pineapple with its juice.
4. Make the Batter: Gradually mix the wet ingredients into the dry ingredients until just combined. Fold in nuts and coconut if using.
5. Bake: Pour batter into the prepared loaf pan. Bake for 50-60 minutes, or until a toothpick inserted in the center comes out clean.
6. Cool & Serve: Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
Optional Glaze:
Mix ½ cup powdered sugar with 2 tbsp pineapple juice and drizzle over cooled bread for extra sweetness.
