Shrimp and Sausage



Shrimp and Sausage Foil Packet


Ingredients:


1 lb large shrimp, peeled and deveined


1 lb smoked sausage, sliced into ½-inch pieces


2 bell peppers (any color), chopped


1 large red onion, chopped


2 cloves garlic, minced


2 ears of corn, cut into 4 pieces each


1 lb baby potatoes, halved


3 tbsp olive oil or melted butter


1 tsp Old Bay seasoning (or Cajun seasoning)


½ tsp smoked paprika


½ tsp garlic powder


½ tsp salt (or to taste)


¼ tsp black pepper


½ tsp dried thyme (or Italian seasoning)


1 tbsp fresh parsley, chopped (for garnish)


Lemon wedges (for serving)



Instructions:


1. Preheat & Prepare:


Preheat the grill to medium-high heat (about 400°F) or the oven to 400°F.


Cut four large pieces of heavy-duty aluminum foil.




2. Boil the Potatoes & Corn (Optional Step for Faster Cooking):


Bring a pot of water to a boil. Add the baby potatoes and corn pieces and boil for about 5 minutes. Drain and set aside.




3. Assemble the Packets:


In a large bowl, combine shrimp, sausage, bell peppers, onion, garlic, corn, and potatoes.


Drizzle with olive oil or melted butter. Sprinkle with Old Bay seasoning, smoked paprika, garlic powder, salt, pepper, and dried thyme. Toss until everything is evenly coated.




4. Seal the Packets:


Divide the mixture evenly among the foil sheets. Fold the sides up and seal tightly, creating a packet.




5. Cook the Packets:


Grill: Place packets on the grill and cook for 10-12 minutes, flipping halfway, until shrimp is pink and cooked through.


Oven: Place packets on a baking sheet and bake for 15-20 minutes.




6. Serve & Enjoy:


Carefully open the foil packets (watch for steam!). Garnish with fresh parsley and serve with lemon wedges.
