Shrimp Salad



Creamy Cucumber Shrimp Salad


Ingredients:


For the Salad:


1 lb (450g) cooked shrimp, peeled and deveined


2 large cucumbers, thinly sliced


1 cup cherry tomatoes, halved


½ small red onion, thinly sliced


¼ cup fresh dill, chopped



For the Dressing:


½ cup sour cream (or Greek yogurt for a lighter option)


2 tbsp mayonnaise


1 tbsp lemon juice


1 tsp Dijon mustard


1 garlic clove, minced


Salt and black pepper to taste



Instructions:


1. Prepare the ingredients – Slice the cucumbers, halve the cherry tomatoes, thinly slice the red onion, and chop the fresh dill.



2. Mix the dressing – In a bowl, whisk together sour cream, mayonnaise, lemon juice, Dijon mustard, minced garlic, salt, and black pepper until smooth.



3. Assemble the salad – In a large bowl, combine the shrimp, cucumbers, cherry tomatoes, red onion, and dill.



4. Toss everything together – Pour the creamy dressing over the salad and gently toss until everything is well coated.



5. Chill & serve – Let the salad sit in the fridge for about 15-20 minutes to let the flavors meld. Serve cold
