Beer Pepper-Stuffed Pizza Recipe
(Think calzone-style or a folded pizza loaded with flavor)
Beer Peppers:
Ingredients:
2 bell peppers (any color), thinly sliced
1/2 red onion, thinly sliced
1 tbsp olive oil
1/2 cup beer (lager or amber ale works well)
1 clove garlic, minced
Pinch of salt and black pepper
Optional: crushed red pepper flakes
Instructions:
1. Heat olive oil in a skillet over medium heat.
2. Add peppers and onions, sauté for 4–5 minutes.
3. Add garlic and cook 1 minute more.
4. Pour in beer, reduce heat to low, and simmer until liquid reduces and peppers are soft and flavorful (about 10–15 min).
5. Season with salt, pepper, and optional red pepper flakes. Set aside to cool.

1/2 cup ricotta cheese
1/2 cup shredded mozzarella
1/4 cup grated Parmesan or Asiago
1/2 tsp Italian seasoning
Optional: cooked crumbled Italian sausage or pepperoni slices

Mix all filling ingredients together in a bowl.

1 pizza dough (store-bought or homemade)
Olive oil for brushing
Extra cheese for topping (optional)
1. Preheat oven to 425°F (220°C).
2. Roll out the pizza dough into a large circle or rectangle.
3. Spoon filling on one half (leave edges clear), fold the dough over and seal edges.
4. Brush the top with olive oil and sprinkle with more cheese or herbs if desired.
5. Cut a few slits in the top for steam to escape.
6. Bake 18–22 minutes or until golden brown and bubbling.
