Black Pepper Asiago Crackers
Ingredients:
1 cup all-purpose flour
1/2 tsp salt
1/2 to 1 tsp freshly ground black pepper (adjust to taste)
1/2 cup finely grated Asiago cheese
3 tbsp cold unsalted butter, cut into small cubes
4–5 tbsp cold water

Instructions:
1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
2. In a mixing bowl, whisk together flour, salt, and black pepper.
3. Add the grated Asiago and mix to combine.
4. Cut in the cold butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.
5. Gradually add cold water, 1 tablespoon at a time, mixing until the dough comes together. Don’t overwork it.
6. Roll the dough out on a lightly floured surface until it’s about 1/8-inch thick.
7. Cut into crackers using a knife, pizza cutter, or small cookie cutter.
8. Transfer to baking sheet and poke each cracker with a fork to prevent puffing.
9. Optional: sprinkle a little extra Asiago and black pepper on top.
10. Bake for 12–15 minutes, or until golden and crisp.
11. Cool completely on a wire rack before storing in an airtight container.
