Carrot Cake Bread
Ingredients:
1 1/2 cups all-purpose flour
1 tsp baking soda
1/2 tsp baking powder
1/2 tsp salt
1 tsp ground cinnamon
1/2 tsp ground nutmeg
1/4 tsp ground ginger (optional)
2 large eggs
1/2 cup vegetable oil (or melted coconut oil)
1/2 cup brown sugar
1/4 cup granulated sugar
1 tsp vanilla extract
1 1/2 cups grated carrots (about 2 medium carrots)
1/2 cup crushed pineapple, drained (optional but adds moisture)
1/3 cup chopped walnuts or pecans (optional)
1/4 cup raisins (optional)

Instructions:
1. Preheat oven to 350°F (175°C). Grease and flour a 9x5-inch loaf pan.
2. Mix dry ingredients: In a bowl, whisk together flour, baking soda, baking powder, salt, cinnamon, nutmeg, and ginger.
3. Mix wet ingredients: In another large bowl, whisk eggs, oil, brown sugar, granulated sugar, and vanilla until smooth.
4. Combine: Add dry ingredients to wet, stirring just until combined. Fold in grated carrots, pineapple, nuts, and raisins (if using).
5. Bake: Pour batter into the prepared loaf pan. Bake for 50–60 minutes, or until a toothpick comes out clean from the center.
6. Cool: Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Optional Cream Cheese Glaze (drizzle on top when cooled):
2 oz cream cheese, softened
1/2 cup powdered sugar
1–2 tbsp milk
1/2 tsp vanilla extract
Mix until smooth and drizzle over the cooled loaf.
